In my mind, it could be either depending on the usage. Grammatically, the first is the most correct, because of how it's said. But the second also qualifies as correct if they're denoting that the volleyball team is female and young. Much like if someone said Male Volleyball Team to differentiate it from Female Volleyball Team. Annoying and doesn't look right, but technically right.
That's what I thought. Someone on yearbook asked me if it needed an apostrophe, and my thought was that, since it's the volleyball team that "belongs" to the girls, it does. Then I asked my mom and she leaned more towards the second meaning, so... But, then again, we don't have a boys' v-ball team, so I don't know if that makes a difference.
As long as both ways are right (and not the person who called me, who was going to put "Girl's Volleyball Team), then I won't worry too much.
